• 3 eggs, room temperature

• 1-1/2 cup all-purpose flour, room temperature

• 1 cup milk, room temperature

• 1/2 cup heavy cream, room temperature

• zest from half a lemon

• salt to taste

• 1/2 cup cherries, pitted and halved

Warm the oven up to 400F. Butter or oil a muffin or popover pan. To make the batter just smooth, beat the eggs a little and then add the flour, milk, cream, zest, and salt. Be careful not to beat the batter too much. Fill each cup about two thirds of the way to the top with batter. Each cup should have some cherries in it. Popovers are done when they are puffy and a light golden brown, about 35 minutes. Warm up and serve.
