Morning Service Coffee in Frogtown serves Justin Duong's Vietnamese creations from 9 a.m. to 1:30 p.m. Tuesday through Sunday. The pop-up, which operates from a bright green food truck, serves creative and tasty versions of banh mi, tacos, and even tostadas.

Smaller details shine through throughout the menu: the vermicelli-studded egg rolls atop the bowls of bun thit nuong; the shower of herbs that accompany the cha gio. Carnivores will enjoy the Hainan chicken and bo luc lac—both listed as "French style beef cube."

This restaurant, which has locations in Alhambra and San Gabriel, can trace its culinary roots back to Pho 79, a James Beard Award-winning eatery in Orange County. Saigon Eden, run by another branch of the Tran family, serves a bright, clear beef pho simmered for 12 hours—and so much more. The dizzying all-day menu offers a breadth of well-executed Vietnamese cuisine you won't find anywhere else, but a few of our personal favorites include the banh cuon, which folds springy wood ear mushrooms and ground pork into steamed rice paper crepes; the bun rieu—a northern tomato-rich broth full of shrimp and crab; and a solid version of bright yellow banh xeo.

3. Stars Hue

Many pho restaurants serve bun bo hue, a pungent, offal-studded red soup originally from Hue, a city in central Vietnam, as a funkier, spicier alternative. Few people in Los Angeles do it better than this food court vendor inside Thuan Phat, a long-running Vietnamese grocery store in South El Monte. The lemongrass-heavy broth here is flavorful and bright, thanks to the addition of herbs, lime, and raw onion—not an easy task in a dish that includes oxtail, pork hocks, and pork blood.

4.Banh Xeo Quan

The namesake dish of Banh Xeo Quan, which literally translates to "sizzling cake," is a crepe-like delicacy from southern Vietnam. Each half moon-shaped crispy pancake at this Rosemead specialty, which gets its bright yellow color from turmeric, comes stuffed with shrimp and pork, fish filet, or a vegan-friendly mix of mushrooms and mung beans. The banh xeo here is easily the best in Los Angeles, served with lettuce, herbs, and nuoc cham. Each one feeds one or even two people—but if you're on the hungrier side, order to go but eat quickly (there's little atmosphere inside and banh xeo gets soggy fairly quickly).

5.Com Tam Thuan Kieu Restaurant

This long-standing restaurant specializes in broken rice served with a variety of proteins. Shredded pork dusted with roasted rice powder, pork meatloaf, grilled shrimp paste, grilled pork, and other options are available as toppings. Make sure to order a fried egg to go with it.

6.Tet-a-Tet

Tet-a-Tet appears at Silver Lake's All Day Baby for dinner from Wednesday to Saturday. The menu is inspired by chef Jonathan Whitener's upbringing in Westminster, California, as well as owner Lien Ta's Vietnamese heritage. A spicy beef salad, banh xeo (crispy turmeric crepe), and Whitener's personal favorite: an oxtail stew made with hominy, star anise, Mexican canela, and palm sugar are among the menu's highlights.

Northern-style pho is reduced to its essentials at Pho Filet: an aromatic, soulful broth with depth derived from long-simmered bones; slightly softer, wide, flat noodles; and your choice of beef cuts.

10. Nem Nuong Khanh Hoa

Visitors to this cash-only strip mall restaurant in Alhambra are in for a world of no-frills culinary delight. The heady, fragrant spices used in pho can be smelled from the parking lot, but Nem Nuong Khanh Hoa is better known for its namesake grilled pork sausage served in fresh rice paper—a.k.a. nem nuong cuon—and saucers of banh beo, a central Vietnamese specialty. The delicate rice and tapioca flour cakes, topped with shredded pork or dried shrimp, draw out the subtle flavors of their accompaniments, especially when doused in chili-spiked nuoc cham (fish sauce vinaigrette).
