Sugar-Free Chocolate Chips For Baking:
While the above raw version is fantastic for using in no-bake treats or eating by the handful, if you want a version that you can bake with or that has the option of being oil-free, simply melt a bar of unsweetened chocolate and sweeten to taste with your favorite sweetener of choice.
You can add a tsp of oil for smoother results, but it's not required. Pour into a parchment-lined container or candy molds, and freeze until firm. Then break into small pieces or pop out of the molds.
This version needs no refrigeration and can be used anywhere you'd use store-bought chocolate chips.
Tips for homemade chocolate chips 1. Melt the cocoa butter and unsweetened chocolate in a double boiler. If they are over direct heat, they are more likely to seize. 2. Use quality unsweetened chocolate such as Ghirardelli or Scharffenberger. Cheap baker's chocolate tends to seize more and will have a grittier texture. 3. Sift your powdered sweetener and your cocoa powder to get out all the lumps. 4. Use chocolate chip molds, silicone trivets, or any chocolate mold to shape your chocolate. Be sure to refrigerate until completely firm. After that, they won’t need to stay in the freezer or the fridge |
Creative Things You Can Do With Chocolate Chips:
Melt them for dipping or coating fruits and desserts
If you have chocolate baking chips at home, you’re just a few steps away from chocolate fondue! Heat chocolate chips in a microwavable bowl, 30 seconds at a time, mixing in between. Then dip a dessert of your choice or use it as a pretty drizzle. You can cool your creation in the fridge, but letting it cool on the counter will result in a shinier coating.

If your sauce is too thick, don’t reheat it! That will just make the chocolate harder. Instead, add a couple of drops of oil and mix. Just make sure it’s something with a neutral taste, like canola oil.
Make a ganache for drip cakes or cupcakes

Takes your cakes to the next level with a chocolate ganache shell! The easiest way to make an impressive drip cake is to start with some chocolate chips.
In a double boiler, stir your chips until melted. (We melt these on the stove instead of the microwave.) Then add a touch of heavy cream, butter, or coconut oil. This is what makes it a creamy ganache, so it’s sliceable like the rest of your cake.
Top off ice cream, desserts, and popcorn for the ultimate movie or party snack

Pour them straight from the bag to take your desserts up a notch
