Step 1 Prepare the ingredients
Soak the shiitake and wood ear mushrooms in warm water for 30 minutes to bloom before washing. When purchasing pork rinds, thoroughly rinse them with water. Heat 1/2 liter of water in a pot, then add 1 teaspoon of salt, 3 slices of ginger, and 300g of pork skin. Boil the pig skin for 10 minutes over high heat, then remove and drain. You may retain the pig skin in the boiling water!
Cut the pig skin into bite-sized pieces once it has cooled.

Remove the remaining chicken meat from the feathers, then rinse with diluted salt water and cut into bite-sized pieces.
Cook the mushrooms in a pot, then rinse and cut them into little pieces. Shiitake mushrooms are steeped for 20 minutes in hot water before being sliced.

After cleaning the chicken, marinate it for around 15 minutes in 1 teaspoon ground pepper and 2 teaspoons oyster sauce.

Step 4 Cook the frozen dish
Put a pan on the stove and add 1 tablespoon of cooking oil. When the oil is hot, add 1 tablespoon of chopped shallot and cook until the shallot smells good. After 5 minutes, add the chicken and stir-fry again. After another 5 minutes, add the mushrooms, pork skin, and shiitake mushrooms and stir-fry again.
When the pork skin is almost firm, add the boiling water from the pork skin and cook for another 10 minutes on low heat.
After that, add 1 teaspoon of seasoning powder and stir it in well. Let it cook for another 10 minutes, then turn off the heat.

Allow the chicken, mushrooms, and broth to cool in a bowl. When the meat is almost cool, place it in the refrigerator for 3 hours or overnight to allow it to firm before serving.
